Quinoa Stuffed Avocado

Avocado has become a popular food, and not just for its flavor. Avocado is high in healthy fats, potassium, folate, and vitamins K and C. Additionally, quinoa is incredibly nutritious, containing high amounts of fiber, magnesium, and iron, as well as various beneficial antioxidants.
2 avocados, pitted
1 cup cooked quinoa
1 can black beans, drained and rinsed
2 scallions, sliced
1 red bell pepper, chopped
1 cup corn (fresh, frozen, or canned)
2 Tbsp. olive oil
Juice of 2 limes
Step by Step Instructions
Scoop out avocados, leaving a thin layer. Dice avocado and set aside.
Make quinoa salad. In a bowl, combine quinoa, beans, scallions, avocado, peppers, and corn. Add olive oil and lime juice, and then toss. Season with salt.
Divide quinoa salad among four avocado halves.
