Grilled Zucchini Rolls

Are you tired of eating the same side dishes every night? Mix things up with these grilled zucchini rolls! With a handful of simple ingredients, this recipe is packed full of flavor and is easy to make.
Not only are these zucchini rolls tasty, they are also full of health benefits. Zucchini is a great source of vitamin A, which supports healthy vision and the normal function of your immune system. These rolls also contain the nutrient-rich vegetable, spinach, which contains iron, calcium, fiber, and vitamins K1, A, and C.
1 ½ oz. reduced fat soft goat’s cheese
2 cups baby spinach
1 Tbsp. freshly minced parsley leaves
⅓ cup basil leaves
½ tsp. lemon juice
1 Tbs. olive oil
⅛ tsp. salt
Pinch black pepper
Step by Step Instructions
Slice the zucchini lengthwise into thin slices. Discard the outermost slices.
Brush olive oil onto both sides of each zucchini slice and season with salt and pepper. Place on a preheated grill or grill pan for about 4 minutes on each side, or until tender.
Combine goat cheese, parsley leaves, and lemon juice in a small bowl. Mash with a fork.
Put ½ teaspoon of the cheese mixture about a half inch from the end of a zucchini slice. Top with a few spinach leaves and a basil leaf (1 small or half of a large leaf). Roll up and place seam side down on a plate.
Repeat with the rest of the zucchini slices.
