With just six simple ingredients, this roasted garlic hummus makes a delicious midday snack, or the perfect appetizer. Serve with carrots, raw bell pepper, pretzels, or pita bread, or spread it on a sandwich for added flavor!

Ingredients

2 heads garlic

4 Tbsp. extra-virgin olive oil

1 can chickpeas (15.5 oz.), drained and rinsed

3 ½ Tbsp. fresh lemon juice

2 tsp. tahini

¾ tsp. salt

Step by Step Instructions

Step 1
Preheat oven to 350 degrees.
Step 2
Peel outer layer of skin off each garlic head. Cut the tip off each head of garlic and lay on a sheet of tin foil. Drizzle 2 Tbsp. olive oil over the cut end of garlic and wrap in tin foil.
Step 3
Put in oven and roast until soft and fragrant (45 minutes to 1 hour).
Step 4
Once the garlic has cooled, remove the cloves and put in a food processor. Add the remaining 2 Tbsp. olive oil, chickpeas, lemon juice, tahini, and salt and puree until smooth.
Pro Tip

Sprinkle olive oil, parsley, and paprika on top if desired.
