Chickpeas are rich in a variety of nutrients, including folate, protein, and fiber, which can help improve your digestive health. Additionally, when crushed, garlic releases allicin, a chemical compound that has been found to reduce inflammation and offer other antioxidant benefits.
2 heads garlic
4 Tbsp. extra-virgin olive oil
1 can chickpeas (15.5 oz.), drained and rinsed
3 ½ Tbsp. fresh lemon juice
2 tsp. tahini
¾ tsp. salt
Step by Step Instructions
Preheat oven to 350 degrees.
Peel outer layer of skin off each garlic head. Cut the tip off each head of garlic and lay on a sheet of tin foil. Drizzle 2 Tbsp. olive oil over the cut end of garlic and wrap in tin foil.
Put in oven and roast until soft and fragrant (45 minutes to 1 hour).
Once the garlic has cooled, remove the cloves and put in a food processor. Add the remaining 2 Tbsp. olive oil, chickpeas, lemon juice, tahini, and salt and puree until smooth.
Sprinkle olive oil, parsley, and paprika on top if desired.
