Ingredients

3 large sweet potatoes

1 cup pecans

3 Tbsp. pure maple syrup

1 Tbsp. cinnamon

Pinch coarse sea salt

Step by Step Instructions

Step 1

Preheat the oven to 400°. Cut 3 large sweet potatoes into 1-inch rounds, skins on. Place onto a baking sheet and cover the sheet tightly with aluminum foil. Bake for 10 minutes.

Step 2

Carefully remove the foil and lightly sprinkle the tops with cinnamon. Drip some maple syrup on top of each round and use a wooden spoon to spread. Gently flip each sweet potato round over and repeat.

Step 3

Place back in the oven for 5 minutes. (They are done when a knife slides in cleanly. They may need another 5-7 minutes.)

Step 4

Broil on high for 1-2 minutes. When the sweet potatoes are lightly caramelized, remove from the oven and allow them to sit on the baking sheet.

Step 5

Roughly chop a cup of pecans, then place in a dry nonstick skillet and toast them over medium heat. Gently stir to prevent burning. (About 4 minutes.)

Step 6

Drizzle about 1 ½ T of maple syrup over the chopped pecans. The maple syrup should sizzle and bubble when added to the hot skillet. Coat all sides of the pecans and cook for a few minutes. Remove from the heat, and allow them to slightly cool in the pan.

Step 7

While they are still warm, take some glazed pecans and top each of the sweet potato rounds. Then sprinkle a small amount of cinnamon and sea salt over each sweet potato.

Step 7

Serve warm and enjoy!
