Mix up your sweet potato dish this holiday season with these glazed pecan sweet potato rounds! Made with just five simple ingredients, these sweet potatoes will make an excellent addition to any holiday celebration.
Sweet potatoes are highly nutritious, providing a great source of fiber, vitamin C, and antioxidants. They are also an abundant source of vitamin A, which supports healthy vision, cell growth, and immune function. Naturally sweetened with maple syrup, this recipe provides a healthier twist to a fall staple.

Ingredients
3 large sweet potatoes
1 cup pecans
3 Tbsp. pure maple syrup
1 Tbsp. cinnamon
Pinch coarse sea salt
Step by Step Instructions
Step 1
Preheat the oven to 400°. Cut 3 large sweet potatoes into 1-inch rounds, skins on. Place onto a baking sheet and cover the sheet tightly with aluminum foil. Bake for 10 minutes.
Step 2
Carefully remove the foil and lightly sprinkle the tops with cinnamon. Drip some maple syrup on top of each round and use a wooden spoon to spread. Gently flip each sweet potato round over and repeat.
Step 3
Place back in the oven for 5 minutes. (They are done when a knife slides in cleanly. They may need another 5-7 minutes.)
Step 4
Broil on high for 1-2 minutes. When the sweet potatoes are lightly caramelized, remove from the oven and allow them to sit on the baking sheet.
Step 5
Roughly chop a cup of pecans, then place in a dry nonstick skillet and toast them over medium heat. Gently stir to prevent burning. (About 4 minutes.)
Step 6
Drizzle about 1 ½ T of maple syrup over the chopped pecans. The maple syrup should sizzle and bubble when added to the hot skillet. Coat all sides of the pecans and cook for a few minutes. Remove from the heat, and allow them to slightly cool in the pan.
Step 7
While they are still warm, take some glazed pecans and top each of the sweet potato rounds. Then sprinkle a small amount of cinnamon and sea salt over each sweet potato.
Step 7
Serve warm and enjoy!
